New York, Chicago, and Detroit are all known for their iconic pizza styles, but Pittsburgh? Growing up in Ligonier, PA, Rob Zorch fell in love with the pan-baked dough crust and super sweet tomato sauces of Jioio’s signature pies. The desire for a slice like these pizzas became something of an obsession, which prompted him to start cooking and selling his own creations on a popular food truck in Richmond. After two and a half years peddling pies at breweries around town, last summer Zorch finally opened a homonymous brick and mortar in Carytown.

If you fancy trying the Pittsburgh pizza that originally inspired the owner, order the Almost Like Pizza Pizza. Initially, Zorch added his hometown favorite to the menu in a moment of nostalgia. He didn’t expect it to become one of his best-selling pizzas – or to meet so many expats from western Pennsylvania excited to see a piece of their home in Richmond.

Along with the predictable cash cows of cheese and pepperoni, the shop’s two top sellers offer refreshing classic flavor combinations. The Upside Down reverses the script (and the order of the ingredients) on traditional pizzas made with cheese and fresh basil topped with vodka sauce. Zorch’s most recent addition to the menu is the Granny Style – a thin, baked pie with a more rustic sauce made from whole, hand-peeled and mashed tomatoes that’s finished with salt, olive oil and a homemade garlic oil drizzled with fresh from the oven. Baking the pie, taking it out of its mold, then returning it to the oven for a bit gives the characteristic crunch that made Grandma so popular.

Eager to protect his staff and customers, Zorch recently closed the store’s elegant dining room. As soon as he is safe again, he promises to open the interior again to customers. “After years as a food truck, I love having a full dining room,” he says. “It feels like you’re in a busy restaurant, which is a lot of fun. The best pizza experiences are out of the oven, let alone having a bar so people now get them a beer with their slice.

Those who do not wish to come to Carytown can still find the Zorch truck parked in front of the Veil or Väsen almost every weekend. If you’re looking for drop-to-door delivery, you’re in luck. From this week, the entire Zorch menu will be available via Grill for delivery via the local bike courier company Quickness.

“We had to stop delivering for a while because DoorDash was so horrible to work with,” Zorch said. “We hit our final point when the folks at DoorDash just threw someone’s $ 80 order in the trash and didn’t give us a refund. ”

With a delicious pie menu, a trendy physical location, and a reliable deck delivery service, Rob Zorch finally feels like he’s done it. “It took a long time to get everything up and running due to the need to run our business during the pandemic and prepare the space. It all took a lot of work, but it’s great to make the dream of opening this store come true.
